I shot this story a little more than a little while back (April 0f 2013 to be exact), and am thrilled to finally share it. Kate Hill – founder/creator of Grrls Meat Camp, cook/teacher at Kitchen at Camont (her village home in the southwest of France) and, writer behind the blog Food Stories from Gascony (where she shares stories and happenings of the good food of Gascony as it is grown and made on the small farms and in the tiny villages of Southwest France) has crafted her own story to accompany the mini publication that I created for her to share an inside look at what goes on at one of her camps.
Kate’s traveling workshop – Grrls Meat Camp – made a stop at the picturesque Napoleon Ridge Farm, in Kentucky, owned by chef and farmer, Tricia Houston, where renowned Principal and Muscolo Certified Master Butcher of Range/Author of the Art of Beef Cutting/Nominated for a 2012 James Beard and IACP award, Kari Underly, taught a group of women butchers all things meat & the finer points of breaking down beef, fowl and pigs. An up close, personal and hands on workshop, for sure.
